Eggless Red Rava Jaggery Cake Recipe
Basic earlier cake was made up of only all-purpose flour.But lots of healthy version of scrumptious is available nowadays.I have used healthy version Rava/Suji as base of the cake.
I have tried many cakes.
Whole Wheat Dates Walnut Cake
Carrot Cake
Oats Cake
Multigrain Cake
This time I have this innovative version
Ingredients:----
Here 1 bowl =1 cup /15-16 Tbsp
- 1 bowl suji / Rava
- 1/2 bowl curd
- 1/2 bowl milk
- 1/4 bowl oil/butter
- 1 medium beetroot(1/2 bowl chopped beetroot)
- 1 tsp baking powder
- 2/8 tsp(2 pinch) baking soda
- 2-3 drops vanilla essence
- few almonds
- few chopped walnuts
- 3/4 bowl jaggery powder
- 1 tsp flaxseed
- First add Rawa in a mixing bowl.
- Add curd in bowl and mix with Rawa and keep it aside for 10 minutes.
- Take beetroot and divide into two parts.
- Grate one big part beetroot and chop small part.
- Now after10 minutes add grated beetroot in the Rawa curd mixture.
- Add milk one-one spoon.
- Mixture will be bit thick.Add vanilla essence.
- Add 1 Tbsp of mixture with walnuts.
- Now add oil in the mixing bowl .
- Mix all the ingredients except baking powder.
- At last add baking powder and baking soda .
- Mix it and transfer it into greased baking pan.
- Decorate with chopped beetroot and almonds and walnut.
- Bake in preheated oven at 180 degree for 20-25 minutes.
- When cake is baked ,leave it for 20 mins to cool at room temperature.
- Serve and enjoy healthy cake.
Tips:----
- In this cake you can replace 1/2 bowl curd with one egg.
- You can increase jaggery to 1 cup or more according to your taste.
- Beetroot also has some sweetness so sweetness should be added accordingly.
- You can add 1/2 tsp of lemon for more sponge cake.
- You can replace beetroot with carrot or only dry fruits ,can add but add more jaggery in that case.
