Healthy Christmas Cake without sugar and alcohol

Let us start with ----

Ingredients:--

  • 1 &1/2 cup whole wheat flour
  • 2 cup jaggery powder
  • 2 eggs
  • 1/4 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/2 cup butter
  • 1 bowl dry fruits (dates, almonds, cashews, pistachios, walnuts)any of your choice
  • 1/2 cup orange juice
  • 1/4 tsp vanilla essence
  • 2 drops lemon juice
  • 1/2 tsp orange peel 
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup milk
Method:---
  1. First mix dry ingredients whole wheat flour, cinnamon powder, nutmeg powder, baking powder, baking soda together in a mixing bowl.
  2. Take a bowl and add all nuts walnut, almond, cashews, seedless dates pieces And mix all with orange juice.
  3. Microwave it for 1 minute and keep it aside to cool.
  4. In a separate bowl add butter in room temperature, jaggery powder, vanilla essence and whisk all properly.
  5. Now add first egg and whisk it properly. Then add another egg and whisk again.
  6. Besides when dry fruits and juice mixture are cool enough mix it into the whole-wheat mixture.So that its flavours settle properly.
  7. Now slowly add dry mixture into egg jaggery paste. Keep whisking.
  8. When you find the batter is thick add milk 1 Tbsp and add more if the batter feels still thick.
  9. Now transfer the cake batter into greased baking pan. Before transferring dustpan with whole wheat flour.
  10. Add some nuts on the top.Cover it with aluminum foil .
  11. Now Bake it in the oven for 40mins at 180°c.
  12. After 40 mins check if it is baked properly.Let it to cool for 20 mins
  13. Transfer it into a serving plate and dust some sugar powder on the top.And decorate with your favourite fruits.
