Carrot Walnut Jowar Muffins
Carrots are highly nutritious.Carrots are a particularly good source of : beta carotene, fiber,vitamin K, potassium and antioxidants (1). Carrots have a number of health benefits. So we should always try to formulate recipes with lots of carrot.
They are also weight loss friendly food and have been linked to lower cholesterol levels and improved eye health.
In this recipe I have used walnut to give crunchy flavour...
INGREDIENTS:--
- 1 cup jowar flour
- 1/2 Tbsp baking powder
- 1 Tbsp curd
- 1/4 cup sugar
- 1 egg
- 3 Tbsp butter
- 5 walnut
- 1 Tbsp milk
- 2 Tbsp grated carrot
- pinch eno
- 1 Tbsp rawa
- 1 tsp vanilla extract
How to make:
Time: Prep :10 minutes
Cooking:10 minutes
Serving :20 muffins
Method:
- First add all dry ingredients Jowar flour,baking powder and carrot.
- Then add egg and milk and beat it properly.

Carrot muffins batter
- Melt butter and add with sugar.Mix properly
- Add eno in the curd leave for 1 minute.
- Add eno mixture into the batter.
- Heat Appam pan over low flame and grease with oil.Or you can use oven and preheat at 180 degree Celsius for 20 minutes . Grease muffins pan.Add batter in muffins pan and bake for 16 to 20 minutes.
- In Appam pan pour each bowl shape space with batter and garnish with walnut.
- Cover for 30 sec and check if its brown then turn or wait for 30 sec.
- So after a minute it will turn into fluffy yummy muffins.
